This Week on the Dining Table

 The "I Know How to Party" Edition...



Sorry this post is so late in the day but I've been sleeping as I started off the week Sunday evening by having a Sleep Study at the hospital. Nobody can sleep any length of time doing one of these for I've been catching up.
Go me!
My oxygen concentrator, which I owned outright, puffed out it's last O2 and went to the great concentrator graveyard in the sky back in October.  Since it had been over 8 years since my full blown study, insurance wouldn't let me do a home sleep study to see if I still need a concentratr.  As I haven't used oxygen with my BiPAP machine for almost 4 full months with no ill effect, I suspect I really don't need the oxygen support any longer(having lost 120 lbs. since 2013 probably has a lot to do with it).
But I bet insurance decides I still need a concentrator and wants to rent me one at an exorbitant rate per month anyway.  It's a good thing we've met our deductibles or this would have been a very expensive exercise in futility of not sleeping.
Glad it's over and bet your bottom dollar that I refuse to pay to rent a new concentrator!

1. Sunday--Roast Chicken, Stuffing, Roast Carrots, Potatoes

3. Tuesday--Turkey, Mashed Taters, Mixed Veggies, Brussels Sprouts
4. Wednesday--Leftover Beef Stir-Fry w/Noodles
5. Thursday--Leftovers
6.  Friday--Leftover Roast Chicken, Stuffing, Roast Veggies
7. Saturday--Mac and Cheese w/Broccoli

Nothing very exciting here.  Used up a few of those hella inexpensive frozen meals I found at Walmart last week so moving meals not fixed because of that to this week.

What got put into the freezer last week....
*  8 tv dinners
*  1 bag of fake sausage patties
*  2 boxes of fish filets 

What got taken out of the freezer and used...
*  2 turkey tv dinners
*  a pizza
* 1 mac and cheese/broccoli tv dinner.ll

I spent $55.89 on food/toiletries/HBA the last week. This brings our food/toiletries/paper goods Total to $321.18 for January.  

There are 0 shopping days left in January.  

I've earned $316.48 on Ibotta in January.
I've earned $5.39 on Checkout51 in January.
I've earned $28.50 on Coupons dotcom/Paypal in January.
I've earned 15,974 points($15.97) from shopping on Fetch in January.
I earned 2,255 Kicks($9.02)from food shopping on Shop Kick in January. 
I've earned 2,019 SB($20.19) from food shopping on Swag Bucks in January.
I've earned $0 from food shopping on Tada in January.

That's $350.37 in rebates(not counting the Shop Kick/Swag Bucks/Tada/Fetch)on $321.18 in grocery spending so in reality it's -$29.19 spent after the 3 rebate apps I count.

My savings percentage for the last week was 80.55%(without "regular" Rite-Aid trips)and the monthly savings total for January comes in at 67.39% so far(w/out R-A).

What do I need to buy to fix everything on this menu?  Nothing really except dog food for the puppies.  The freezers and fridge are packed to the gills now.  February will be a pantry challenge....at least will start off as one. ;-)

This Week on the Dining Table

The "Where's Breakfast Mommy?!?" Edition................

This is what was planned--
1. Sunday--Tacos and/or Taco Salad
2. Monday--Garlic Pork Loin, Mac and Cheese, Cabbage
3. Tuesday--Baked Catfish, French Fries, Mixed Veg
4. Wednesday--Chicken/Turkey Enchiladas, Rice, Beans
5. Thursday--Leftovers
6. Friday--Pizza(maybe), Salad
7. Saturday--Leftovers
Plus we will have sliced tomatoes and cukes to fill in if we are a low on a dish or someone doesn't want something served(me usually).

And this is what actually happened--

1. Sunday--Tacos and/or Taco Salad
2. Monday--Garlic Pork Loin, Corn on Cob
3. Tuesday--Baked Catfish and Salmon, Cabbage, Roasted Sweet Potato cubes
4. Wednesday--Turkey Enchiladas(I had beans)
5. Thursday--Hot Dogs, Squash and Onions
6. Friday--Leftovers
7. Saturday--Rigatoni and Meatballs, Salad


Last week saw 5 nights of home cooked dinners, 1 nights of leftovers/ffy, and 0 nights of Eating Out/Take-Out.
The pork loin was done in the crockpot as Monday was still hot/muggy.
Wednesday I was able to use leftovers-turkey already cooked from the freezer.  I cooked Wednesday's dinner on Tuesday as I was running the oven then.  The Enchiladas just needed reheating on Wednesday. The sweet potatoes were long in the tooth and needed using so I was glad to get those cooked/served.
I did sauce and 2 packs of those meatballs in the crockpot on Saturday.  We had Rigatoni/Salad with them Sat. and there is enough for another meal or two lunches this week.  I'm not planning on meatballs again for a dinner since, well, Hubs. lolz

What got put into the freezer last week.....
* 10 lbs. of meatballs
* 3 lbs. of nitrite-free bacon

What got taken out of the freezer and used last week.....
* Cooked Turkey Breast slices
* a Pork Loin
* medium Catfish fillet
* small Salmon portion
* 8 hot dogs

Two trips to Malacari's produce($57.27)-and 12 lbs. of meatballs later-brought the weekly spending to $57.27 and my August total to $238.43.
I shot for $60 in food spending last week and I kept to it. go me. lol

My savings percentage last week was 56.35%(without Rite-Aid trips)and August's monthly savings total comes in at 49.13%(w/out R-A). 

I have 5 more food shopping/spending days in August and $161.57 left in my $400 food budget for this month.  I guess I will stay under budget this month on food

Leftovers going into this week......Pork Loin slices, 2
Enchiladas, Mixed Veg, Cabbage, 2 Corn on Cob, Rigatoni and Meatballs.
I'll strip the kernels off the corn and either freeze them or put them in the pot pie I am making tonight.  Hot weather rolls back in Tueday so no more running the oven for awhile and back to stove top/grill/crockpot meals for awhile longer.

This week will see 5 new meals cooked, 0 night of leftovers/FFY, and 2 nights of Take-Out/Eating Out.

What needs buying for this menu? We need milk and I want a watermelon this week.  I'll go to Weis before Thursday to use that $5 off $25 Q.

The "Enjoying the Last of the Morning Glories" Edition--



Fairly soon my flowers here will be history for another year.  Between the weather turning colder(not yet)and both of the dogs eating the vines they can get to(yes they are EATING the vines lolz)I haven't got much longer to enjoy these beauties.

6. Friday--Leftovers or BLTs
7. Saturday--Pizza(homemade), Salad

And this is what actually happened--
1. Sunday--Leftover turkey breast w/gravy, roasted broccoli
2. Monday--various Meat leftovers, Roasted Broccoli
3. Tuesday--Anniversary Dinner Out(36th)
4. Wednesday--TV dinners(various)
5. Thursday--Sausage, Squash and Onions, Mac and Cheese
6. Friday--Fried Chicken, Potato Salad, Sliced Tomatoes
7. Saturday--Chili and Cornbread

Last week saw 4-5 nights of home cooked dinners, 1-2 night of leftovers/fend for yourself/tv dinners, 1 night of Take-Out or Eating Out.  
I didn't buy any lobster last week because I found other clearance/pantry deals to use up the rest of the monthly grocery budget including some discount meats(sausages, fryer chicken).  We also didn't make a pizza either.
Maybe I'll get some lobster this week if I want to splurge out but haven't checked the PC ad yet to see if they are still on sale.

Trips to Weis, the Shursave Market, Walmart, Target and the Farm stand brought the weekly food spending to $110.63 and the monthly total to $398.20.
I have 0 days left in my shopping month for August and have $1.80 left in the food budget that I didn't spend. 

My savings percentage last week was 59.62%(without Rite-Aid trips)and August's monthly savings grand total came to 58.50%.

Leftovers going into this week......chili, cornbread, squash and onions, small piece of London Broil.

This week will see 6 new meals cooked, 1 night of leftovers/FFY, 0 nights of Take-Out/Eating Out.
Maybe one less new meal if we have enough leftovers for 2 nights.  Not sure since Hubs often eats leftovers for lunch(he doesn't care for cold sandwiches).

This Week on the Dining Table

The "Say Hello To My Little Friends" Edition--



We celebrated Father's Day on Saturday by grilling steaks and corn and inviting these bad boys to the party as well. 

These lobsters came from Quebec as it's not quite lobster harvesting season in US waters.
Don't say I don't support the Canadian economy! lolz

4. Wednesday--Reuben Sandwiches, Cabbage

6. Friday--Chicken Tenders, Veg(TBD)
7. Saturday--?  Pizza or something easy from the Freezer

And this is what actually happened--

4. Wednesday--Reuben Sandwiches, Cabbage
5. Thursday--Leftovers

7. Saturday--Father's Day Cook-Out(steak,lobster,corn)

Everything got served(I had a eggplant parm tv dinner on Thursday but everyone else had something different)and we had Father's Day meal on Sat. instead of Sun. because the weather was nicer that day.  I got 1/2 price bag of spinach so Fri. TBD Veg became a Spinach Salad.
Last week saw lots of cooking.
I also made TWO desserts last week(I don't often make those.).  I had a 1/2 a can of cherry pie filling in the fridge that needed using up so I made a Pear/Cherry Crisp in the crock pot. Recipe HERE. (My addition is to layer a few sheets of paper towel on top, under the lid so that it doesn't dry out too much while cooking in the crock pot.)  This is a double win because it used a box of cake mix that needed to go as well.  Then I made a pan of brownies for Father's Day at Hubs request.

Last week saw 5 nights of home cooked dinners, 2 night of leftovers/fend for yourself, 0 nights of Take-Out or Eating Out.  

A trip to Ollie's, Weis, and the Shursave market brought the weekly food spending to $84.00 and the monthly total to $315.63.

I've got $84.37 left in the food budget for June and 12 days left in my shopping month.  

My savings percentages last week was 48.20%(without Rite-Aid trips)and June's monthly savings total so far is at 53.46%.

Leftovers going into this week......a few helpings of Beef Pie and lots of Stuffed Shells(it made a ton), Cabbage and a small hunk of Corned Beef.

Sandwiches tonight due to the heat advisory here and I don't want to run the oven.  Wed. may be a FFY night as well and everyone can make their fav breakfast foods because I am not making 8 different things. lolz

Not much inventive or exciting this week as I've got things to get done.  Everything except Tuesday's dinner can be handled by the other 3 people who live here if I don't feel like orchestrating meals this week.

I'll just stay in town and shop for this stuff and hope for good prices.

This Week on the Dining Table


It's the "Will You Look At That!" Edition--



This was a potted hyacinth I bought last Easter for myself.  I love the smell of hyacinth.  It's one of my all-time favorite flower scents after gardenia.  After they bloom and die back I never can get the bulbs to bloom again if I plant them outside.
I didn't replant these but had thought the chipmunks that plague our yard had dug them up(as I left this pot on the back deck)and ate the bulbs this Summer.
Then in late Sept. I noticed green shots coming up out of the pot and it was the hyacinth bulbs growing again!  I brought the pot inside when it turned cold later that month, watered it regularly and put it by a window and week by week we noticed the green shoots getting taller.

And voila!.....they put out flowers last week!!  Of course the stalks are suppose to be about 8 inches taller before they flower but I will take this anyway. lolz
When the blooms died back the pot will go back outside in the deep freeze that is our yard now before bringing it back in about February to try to get it to bloom again.

3. Tuesday--Leftovers(Hubs had tacos, I had chicken soup)
4. Wednesday--Kielbasa on Rolls, baked beans
5. Thursday--Guinness Beef Stew
6. Friday--Rockfish, Green Beans, Garlic mashed potatoes
7. Saturday--Hamburger on roll(We had Chinese out for lunch w/lots of veggies)

I had enough leftover roast chicken to make a small pot of chicken soup so I had that Tuesday for dinner and the Pecan Chicken got pulled from rotation.

The bag of frozen Rock fish we bought at that Grocery Outlet last month was a bust.  The "lemon pepper" marianate it was in wasn't peppery at ALL and the lemon part was a sort of "lemon flavored sludge" coating the top of the fillets.  After baking the fish I scraped the sludge off of mine before eating it after tasting it the way it came.  It was a good price, the product was fine but the marinade was far from edible.  We have 2 more pieces of this fish to cook but will be scraping the marinade off before cooking next time and we won't be looking for this product again. 8-(

The Italian tortas(think pizza pot pie)were so-so as well.  It was something different but I won't go out of my way to buy these again, unless they are very inexpensive(as these were).

As for my grocery spending last week......Target, the Bread Outlet to stock up, 2 small trips to Weis for loss leaders and Turkey day needs, and a few things bought at Ollies(Good Stuff Cheap!)for a total this week of $63.51 OOP.   Month to date is $243.88 spent for November.  $28.42 of that spending was for food bank donations which I am done buying for this load.
I still have $56.12 left in the $300 food budget for the month.

Leftovers going into this week.... Chicken Soup, Beef Stew, Meatloaf, Baked Beans, Brussel Sprouts, Green Beans.

This week will be a hodge-podge of meals(1 night Eating Out, Leftovers 3 nights, 1 new meal)with Thanksgiving Dinner thrown into the mix.  Gotta eat all those Leftovers before Thursday to make room for all those Thanksgiving leftovers, am I right? lolz

What I need to buy for this menu?.........still need to buy celery, carrots and rutabaga for Thanksgiving Dinner, which will be bought later today.

While waiting for Hubs to exchange his jeans on Saturday I poked around the men's department at that store and saw this Christmas Sweater outfit displayed.

I can see a kid or a young girl maybe but a guy(even a pug lover guy)?  Nope

4. Wednesday--Meatballs Subs, Caesar Salad
5. Thursday--Leftovers
6. Friday--Tuna Casserole, Brussels Sprouts
7. Saturday--Leftovers

And this is what actually happened--

1. Sunday--Roast Chicken with Carrots, Onions, Potatoes, Cauliflower, Broccoli
2. Monday--Garlic Honey Shrimp w/stir-fry Veggies, Rice
3. Tuesday--Subway sammiches
4. Wednesday--Leftovers(I had tacos, Hubs had ravioli in meat sauce)
5. Thursday--Meatball Subs, Caesar Salad
6. Friday--Leftover Roast Chicken stuff
7. Saturday--Leftover Garlic Honey Stir-fry Veggies and Rice

Well the restaurant we were suppose to eat out in was jammed on Tuesday so we got Subway instead and we went back Saturday for lunch to use it and then had leftovers that evening for dinner.
The tuna casserole didn't happen yet again.

As for my grocery spending last week......three small trips to Weis meant $29.56 in spending.  Big Lots! and the local grocer trips added another $24.89 for a total this week of $54.45.   Month to date is $180.37 spent for November.  $28.42 of that spending was for food bank donations.
I still have $119.63 left in the $300 food budget for the month.

Leftovers going into this week....taco filling, garlic honey stir-fry veggies and a small helping of roast chicken and veggies.

I'll use up the taco filling and roast chicken w/veg for lunches this week.  Leftover stir-fry veggies may appear in a dinner instead of what veggies are planned.

What I need to buy for this menu?.........nothing.  I went through the chest freezer(had to dig out the turkey breasts for Turkey day anyway)so I also dug up some things from the bottom that we need to use sooner rather than later.  This included some kielbasa, some bagged veggies, a premade meatloaf and a hunk of beef for stew.  The meatloaf is a mix of ground chicken/beef so with the stew, 2 beef meals this week, a fish, a chicken and a pork meal.  There is some sausage in the Torta but it's mostly a meatless dish.

Even though I don't "need" anything this week I'll buy some mayo for the food bank(and mustard if it's cheap enough).  I also plan to go to Target this week and use that $10/$50 food/beverage coupon to pair with ManuQs and my free to me Target gift card.

My thanksgiving shopping list is still just celery, rutabaga and whipped cream and I'll buy those the end of this week or beginning of next week.

This Week on the Dining Table

The "The Sun Finally Came Out, It Warmed Up & We Went Out" Edition.....

It hit 64F degrees here yesterday so we went out for a bit.
We had lunch at Bob Evans(cuz I had a coupon!lol).  They have a mailbox as part of their exterior décor at the restaurant....I guess to give it a "home" feeling, right?

 
 
Well just to prove that there are idiots walking around among us, they needed to post this sign on the mailbox........

I guess some moron tried to put outgoing mail in the thing. 8-P
 

Anyway, onward to the meal planning!
 
Here's what was planned last week.......

1.  Easter ham, deviled eggs, mac & cheese, mixed Italian veggies, sweet potatoes
2.  grilled fish, leftover Easter side dishes
3.  chicken marsala, mashed potatoes, asparagus
4.  Assorted leftovers
5.  Boston baked beans, assorted leftovers
6.  leftover Popeye's meal stuff
7.  quiche leftovers

And this is what actually happened--

1.  Easter ham, deviled eggs, mac & cheese, mixed Italian veggies, sweet potatoes
2.  leftover Popeye's meal
3.  chicken marsala, mashed potatoes, asparagus
4.  leftover mac & cheese w/ham pieces, tomato and cuke salad
5.  leftover quiche, sugar snap peas
6.  Subway sandwiches
7.  leftover chicken marsala, mashed potatoes, corn

Everything went as planned except I didn't make the beans or the grilled fish meal.

Last week I made 1 trip to the Dollar Store and spent $9.00 OOP on $18.50 worth of reg. retail groceries.  Not quite NO grocery shopping but quite low.

I had 2 transactions at Rite-Aid last week and spend $1.55 OOP on $67.68 worth of toiletries.

For the week, $10.55 total spending on $86.18 worth of food/toiletries/HBA.


$172.32 spent of my $300 April food budget, leaving us $127.68 for the next 17 days of the month. 

Leftovers going into this week are--1 slice of quiche, corn, mac and cheese and a bit of ham and the bone. 
I will confess to a bit of food waste last week.  The leftover sloppy joe meat went moldy before I got a chance to use it up.  bleh.  Not a bit portion but wasting meat really chaps my hide because it is so expensive!
Why don't the junk foods ever go to waste? lolz

Here is the plan for this week.........

1.  Spaghetti and meatballs, salad
2.  Ham and bean soup
3.  Fish, potato salad, whatever veggies I can dig out of the freezer
4.  Kielbasa on rolls, grilled onions, Brussels sprouts
5.  Chicken and Confetti pepper fajitas
6.  Leftovers
7.  Maybe get Take-out or BLTs(if I can find some nice tomatoes this week)

1 night of leftovers and 5 nights of new dishes.  There will be leftovers of the spaghetti, potato salad, the soup and the fajitas and the take-out(if we get some) plus the quiche, corn and mac & cheese from last week.
 
What I need to buy for this menu......rolls, peppers, maybe tomatoes and we will need milk.  I plan on spending less than $20 this week.

This Week on the Dining Table

The "New Car Edition".....

Thankfully we have the cash to pay for this in full, no financing and no eating of rice and beans for the next 5 years to afford it.


We still have leftovers.  This week will be all about using them up.
Hopefully this will translate into a small grocery bill for this week ending March.
 
Here's what was planned last week.......

 1.  Lasagna, leftover Collards
2.  Salmon, Broccoli
3.  Irish Stew
4.  Rueben Sandwiches
5.  Roasted Turkey Breast, Stuffing, Cauliflower, Cranberry Glop leftovers
6.  Kielbasa on Rolls, cabbage leftovers
7.  Leftovers of some kind 
 
And this is what actually happened--

1.  Lasagna, leftover Collards

Everything went as planned except no turkey leftovers eaten nor Kielbasa on rolls and leftover cabbage.  We ate an extra night of other leftovers instead.

Last week I made 5  trips to the grocery store(and have a carry over from the previous week I forgot to put down then), so I spent $126.51 OOP on $222.98 worth of reg. retail groceries.
I also earned a $7 gift card for some of those purchases so $7 in future food paid for already.

I had 3 transactions at Rite-Aid last week and spend $1.25 OOP on $127.79 worth of toiletries.

For the week, $127.76 total spending on $350.77 worth of food/toiletries/HBA.

$242.70 spent of my $300 March food budget, leaving us $57.30 for the next 7 days of the month. ($64.30 if you count that $7 gift card.)

Leftovers going into this week are collards, corned beef and cabbage, turkey and stuffing, lasagna and Irish stew.  Yep, we still have a LOT of leftovers.

Here is the plan for this week.........

1.  Turkey, stuffing, corn, cranberry glop leftovers
2.  Lasagna, salad or collards leftovers
3.  Irish Stew leftovers
4.  Rueben Sandwiches using corned beef leftovers
5.  Sloppy Joe sandwiches, cole slaw
6.  Kielbasa on Rolls, cabbage leftovers
7.  Salmon, leftover assorted veggies, cole slaw

3 nights of new meals, 4 nights eating up the leftovers.
 
What I need to buy for this menu......nothing.  We stopped at the Bread Outlet as we were down in the city buying the car on Saturday and I got some on special Salmon filets also while out on Saturday.

Then I bought some Zero Powerades for $1 each and got a $7 Catalina at Weis before that deal ended.
Actually the Catalina did NOT print so they gave me a $7 gift card which won't expire so it's even better. 8-)

I may pick up some salad greens, tomatoes, milk and honey this week as we are out/those are on special this week.

This Week on the Dining Table

The "The Boy is Home" Edition ........


Went to pick him up on Saturday.  Stopped at Quaker Steak & Lube for lunch.


For the next week we are an eating family of 3 again.  Fun.
 
Here's what was planned last week.......

1.  Beef Stroganoff, rice, veggie
2.  Salmon, Squash casserole
3.  Pasta with meat sauce, salad or soup
4.  Pork filet or Country Fried Steak(diners choice), Steak fries, leftover squash casserole
5.  Pizza, Salad
6.  Leftovers or Soup & fresh bread
7.  Ginger garlic duck & veggie stir-fry, rice
 
And this is what actually happened--

Everything went as planned except because of extra leftovers we didn't have the pork filets meal.

Last week I made 1 trip to the grocery store(but I have that last trip in Feb. on this month's tab), so I spent  $51.24 OOP on $104.74 worth of reg. retail groceries.  I had 1 transaction at Rite-Aid(but I have 1 trip after I closed out the books on Feb.)and spend $1.38 OOP on $59.06 worth of toiletries, so $52.62 total spending on $163.80 worth of products last week.

$52.62 spent of my $300 March food budget, leaving us $247.38 for the month.

Leftovers going into this week are asparagus/leek soup and ham/bean soup and 1 helping of squash casserole.

1.  Leftover Pasta with meat sauce, Collards
2.  Roasted Turkey Breast, Stuffing, Corn, Cranberry Glop
3.  Lasagna, Salad or Soup

What I need to buy for this menu......celery, milk, cabbage and corned beef.  That should come in about about $14 but there are few things on special I want to pick up this week as well so I am figuring about $100 for all.  This also includes some snacks and foodstuffs for College Boy to take back to school with him.

If course my entire menu could end up being totally different from this plan if College Boy wants something different.  Yah, now that we only see him infrequently I tend to cook his favorites when he is home.  8-)

This Week on the Dining Table


The "Lots of Snow Here & More Coming" Edition........

 

Here's what we got overnight.....about 1 inch.  That's on top of the 5 inches we got overnight Friday/Saturday.
These Nor' Easters are tricky where we live.  They can track more west and we get dumped on too like the coast.  This one is suppose to stay east so we won't be looking at a potential of 3 feet here.  Maybe another 6 inches.
Another storm is due in Thursday from the North but shouldn't give us but a few more inches.
Ah, the joys of January in NEPA! lolz


Here's what was planned last week.....................

1.  Leftover Lasagna
2.  Garlic Ginger Shrimp Stir-fry
3.  Bean and Ham Soup(If too salty for me I'll eat Broc/Caul. Soup.)
4.  Chicken Parmesan, Salad
5.  Broiled Salmon, Coleslaw, Veggie

7. Birthday Meal out(probably steak)
 
And this is what actually happened--

1.  Leftover Lasagna, Steamed Broccoli
2.  Chicken Parmesan, Salad
3.  Birthday Meal out-Steak, Salad, Green Beans
4.  Leftover Broccoli-Cauliflower Soup
5.  Breaded Fish, Coleslaw, Steamed Sugar Snap Peas
6.  Brisket on Rolls, Coleslaw
7.  Leftover Lasagna, Salad

Substituted Breaded Fillets for Salmon and didn't make the Shrimp or Bean Soup yet.  Still eating on that Lasagna too. burp 

Last week I made 3 trips(Hubs made another one too)to 2 different grocery stores here and spent $92.79 on $197.12 reg. retail worth of food.

My spending so far for January on food is $258.08 for $545.00 worth of food.(Not counting Rite-Aid.)
I went $7+ over on my self-imposed $250 budget for January and there are 5 days left in the month.

Let's see if I can keep from setting foot into a grocery store until Feb. 1st(Sunday) and dig through the pantry/freezer to come up with meals for this week.  I might break down and go Saturday as there are about $10 worth of deals I want.

Leftovers going into this week are barbecue, coleslaw and breaded fish.

2.  Risotto with Chicken & Mushrooms

I bought a cheap small whole chicken last week(instant discount sticker)so I've got it in the crockpot today cooking away.  Will use half for Risotto tonight and the other half of the meat and stock from simmering the bones in Chicken 'n Dumplings later this week.  Tomorrow I'll make the Ham & Bean soup.
We still have 2 helpings of Lasagna leftover even after having it for dinner and lunch last week.  That will probably go into the freezer this week.
 
I can do this plan without buying anything this week.

This Week on the Dining Table


The "It's My Birthday Week but I Really Don't Want to Cook" Edition........


Yep, Sluggy adds another year to her tally this week.
bleh.

Maybe I can talk Hubs into not making me cook this week like last week mostly.
Yeah, I am getting spoiled.
 


Here's what was planned last week.....................

And this is what actually happened--

1.  Fried Chicken, Coleslaw, Corn, Biscuits
2.  IHOP(I had an egg sandwich & onion rings)
3.  Subway sandwich(Chicken)
4.  Leftovers(Still didn't feel like cooking lol)
5.  Lasagna, Salad
6.  Broccoli/Cauliflower Cheese Soup
7.  Chinese Take-out

I cooked 2 meals for the week, once we got home on Tuesday.  I am just a slug.
  
While I was in Virginia I made a trip to Harris Teeter and some other snacks at Food Lion.  Add in the grocery shopping I did before we left and I had spent a grand total of $143.61 in food shopping and brought home products of a retail value of $317.13 up to Jan. 10th. 

Last week I made 1 trip to the local grocer and spent $21.33 on $30.75 reg. retail worth of food.

My spending so far for January on food is $165.29 for $347.88 worth of food.(Not counting Rite-Aid spending.)
We have 12 days left in the month and I want to keep the spending below $250 for January.  This leaves me approx. $85 left to spend.

Yah, good luck with that Sluggy ol' gal! ;-)
