This Week on the Dining Table


The "It's Not Suppose to Be this Warm Here in February!" Edition.........


In the car on the way to a different Weis(PMITA)Markets on Friday I snapped this blurry shot of the temp. on my car's dashboard.  If you can't make it out it says 59F.  A minute later it rolled over to 60F.
WTF?!?
Normal around here in February ranges from a high of 40 something to a low of -10 or so.
And I just read it's suppose to hit the mid 50sF again this week.

Crazy weather.

Moving On....

Onward to the meal planning!

This is what was planned--

1. Sunday--Pad Thai fake-out
2. Monday--Hamburgers, Tomato and Cuke Salad
3. Tuesday--Beef Lasagna, Tossed Salad
4. Wednesday--leftover Ham, Mac and Cheese, Veggies TBD(maybe leftover corn and peas)
5. Thursday--Chicken Thighs and something else lolz
6. Friday--Ham and cheese scrambled eggs, French Toast, Fruit
7. Saturday--Leftovers

And this is what actually happened--

1. Sunday--Pad Thai fake-out
2. Monday--Beef Lasagna, Tossed Salad, Garlic Bread
3. Tuesday--leftover Ham, Mac and Cheese, Assorted leftover veg-corn and peas
4. Wednesday--Hamburgers, Potato Salad, Baked Beans
5. Thursday--Fend For Yourself(Don't remember what exactly)
6. Friday--Chicken Teriyaki Stir-Fry, Fried Rice
7. Saturday--Leftovers

Last week saw 5 nights of home cooked dinners, 2 nights of leftovers/fend for yourself, 0 nights of Eating Out/Take-Out. 
I used leftover roast chicken for the Pad Thai and the Teriyaki Stir-free.  The cuke got used somewhere else so we had beans and tater salad w/the burgers instead.
Breakfast for Dinner and Chicken Thighs meal didn't happen(I was sick one night and I wanted to use up the rest of the leftover roasted chicken in a stir-fry so we did that chicken meal instead of thighs.)and move to this week.

What got put into the freezer last week.....
*  15 pints of ice cream/frozen yogurt
*  2 large bags if cheese ravioli
*  1 box of breaded fish fillets

What got taken out of the freezer and used last week.......
*  Nothing-It was all meats I already had in the fridge

 A couple of grocery trips.....3 smallish trips to Weis($16.16/$36.40/$31.45)and a trip to Malacari's Produce Market($23.40)brought the weekly food spending to $107.41 and brought the February monthly total to $180.89 so far.  And I forgot to include the trip on Friday where I bought 15 pints of ice cream(not going to go back and redo the numbers, I'll just add it to this coming week's total). ugh

My savings percentage last week was 58.85%(without Rite-Aid trips)and February's monthly savings total comes to 63.85%(w/out R-A).  

I have 10 more spending days in the month(plus that 1 trip to Weis to account for from last week).

Leftovers going into this week....ham, mac and cheese, sweet potato casserole, lasagna, potato salad, baked beans, 1 helping of chicken teriyaki stir-fry, fried rice(more than 1 helping).

1. Sunday--Leftover Ham and Mac and Cheese(just Hubs and I)
2. Monday--BBQ Chicken Thighs, Asparagus, Leftover Fried Rice
3. Tuesday--Birthday Meal Out(Ex-College Boy)
4. Wednesday--Breakfast-Scrambled Eggs w/Ham and Cheese, French Toast
5. Thursday--Brats on Rolls, Grilled Onions, Broccoli, leftover sides smorgasboard lolz
6. Friday--Leftover Lasagna, Tomato/Cuke Salad
7. Saturday--Leftovers

This week will see 3 new meals cooked, 3 nights of leftovers/FFY, 1 nights of Take-Out/Eating Out.

What needs buying for this menu? Asparagus, a Cuke, milk(as usual). I'll be making a trip to Weis for more free yogurt and free soup this week.  Not much else on my radar yet.  ;-)

This Week on the Dining Table

Here's what was planned last week--

1. Sunday--Spaghetti and Meatballs, Salad *
2. Monday--Reuben Sandwiches(should finish up the corned beef)
3. Tuesday--Haddock, Cole Slaw, Asparagus
4. Wednesday--Leftovers
5. Thursday--Chicken Parm, leftover cooked Carrots and Cabbage
6. Friday--Leftovers or Pizza in Freezer
7. Saturday--Leftovers

And this is what actually happened--

1. Sunday--Spaghetti and Meatballs, Salad *
2. Monday--Reuben Sandwiches(didn't finish the corned beef)
3. Tuesday--Chicken Parm, Asparagus
4. Wednesday--Leftovers
5. Thursday--Tempura Haddock, Cole Slaw
6. Friday--Grilled Steak, Baked Potatoes, Salad
7. Saturday--Leftovers

7 meals cooked at home, 2 of them a night of leftovers or Fend For Yourself, and 0 night of eating-out/take-out.

As for the grocery spending.....2 trips to Weis brought the food spending last week to $51.33. I used $38.53 in gift cards(1 trip)so it would have been $89.86 without the gift cards. This brought my April food spending total to $51.33.  There are 27 days left in the month.

My savings percentages last week was 70.44%(or 48.25% if I count the gift card purchases).

Leftovers going into this week.......1 slice Meatloaf, Cabbage and Carrots, Spaghetti and Meatballs, Cole Slaw and Haddock and a little bit of Corned Beef(enough for a sandwich).

2. Monday--Leftovers(hopefully using up some stuff)

7. Saturday--Fajitas(using leftover roast chicken)

This week will see 3-4 new meals cooked, 1 night of Take-Out/Eating-Out and 2-3 nights of Leftovers.

What I need to buy for this menu?  The Fried Chicken. for Sunday. Weis has a 8 pce. deal for $6 this week.  We are also out of milk and fruit.

This Week on the Dining Table

This Week on The Dining Table
This is the "Leaving town so use it up few days" Week.

 
Here's what was planned last week--

 Sunday--Subway sandwiches
Monday--Chicken and Broccoli(from the garden)in Garlic Sauce, Coconut Rice
Tuesday--Pork Chops, Green Beans, Roasted Taters(trying again to get this cooked!)
Wednesday--Barbecue Ribs & Pulled Pork Sandwiches, Coleslaw, Collards
Thursday--?  Will play it by ear
Friday--?  Will play it by ear
Saturday--Probably bunches of leftovers
 
Everything Sunday through Wednesday as planned, with the addition of Squash Casserole for Wednesday's meal.  Thursday we had homemade meat sauce with ravioli and tossed salad(at Tanner's request & I had raviolis and precooked crumbled ground beef for a meat sauce in the freezer) , Friday Tanner & I had a real late lunch at Friendly's so no dinner and Saturday we had a burgers/dogs cook-out for lunch before Tanner left so it was just leftover stuff from the week for dinner that night.
 
Last week,  I spent  $106.43 on  $167.51 worth of groceries at 2 different grocery stores and the farm stand.  That included about $50 in some meat deals and discount bakery goods(for while company was here), a pizza, snacks and PowerAde for #2 Son and $5 in fruit & $3.50 for local tomatoes at the farm stand.   The birthday cake was another $7 and bad planning on my part necessitated a $9.16 ground beef purchase(I had frozen but didn't think to thaw it out beforehand).  This means I spent only about $31 on essential food items that were used last week.
 
Food waste galore last week......4 strips of turkey bacon that just got "old" before it got 'et and a 1/4 of a bag of carrot shreds that again, just got "old".  And 1 of the cantaloupes I bought at the farm stand was too ripe so it went to the great compost in the sky. lol  I should have pureed it and froze it for smoothies but freezer space is still at a premium here and I had company and just didn't feel like standing around pureeing melon with them here.  Yes, I am using company as an excuse for throwing out a melon. 
I have NO  shame.......8-(
  
Leftovers going into this week's plan......where do I begin??lol......squash casserole(2 helpings), collards(1 helping), spare ribs(8), pulled pork, coleslaw, pork chops(2), meat sauce, coconut rice,, chicken w/broccoli(1 helping).  Hubs and I will try to eat on the foods #2 Son & others won't eat while we are gone today(just like we ate leftovers yesterday).

Here's this week's meal plan--such that it is--leftover foods are in bold lettering--
 
Sunday--Chicken and broccoli in garlic sauce,  PLUS fresh broccoli from the garden, coconut rice
Monday--Assorted Leftovers that #2 Son won't eat this week

Wednesday--Whatever Sonya Ann fixes....uh oh.....lolz
Thursday--Eat Out
Friday--?
Saturday--Wedding Reception

I have NO shopping list this week.....yah! 
Hubs and I will be eating out 5 nights this week.  1 night at Sonya Ann's house and 1 night at the Wedding dinner.  The other 3 nights are wide open and unknown at this point but will involve restaurants.  I am taking a bottle of no salt Ketchup with me however, if I need it to "doctor" up something that is not quite edible.  Plus I will be trying to make R/S diet friendly choices.  Wish me luck!

Instead of stocking up the fridge and leaving a meal plan for those who will be at home, I'll just give them money and they can decide what to serve/fix/eat.
Meals at my house this week will sort of be like Vegas......what happens at meal time at Sluggy's house STAYS at Sluggy's house. ;-)

This Week on The Dining Table

This is the "Everything is set until company gets here" Week.

 
Here's what was planned last week--

Sunday--Leftovers or Whatever you can Find in the Fridge
Monday--Leftover Lasagna for me, Sausage Sammies for Hubs
Tuesday--Chicken & Dumplings
Wednesday--Pork Chops, Green Beans, Roasted Potatoes
Thursday--Fend for Yourself night, I can't eat. eek!
Friday--Probably Chinese Take-Out as I won't feel like cooking but will be ravenous lol
Saturday--No Clue yet....maybe that grilled Pizza I never made ?
 
We were good with this plan until Tuesday.
Wednesday we had leftovers again since there were still leftovers.  Friday Hubs took me to a Chinese buffet after we got out of the colonoscopy so we had an early dinner/late lunch.  I think I had some pickles and melon that night when I got hungry again.
Saturday Hubs wanted to eat out since we were running errands(mostly looking at travel trailers)so we went to TGI Friday's.  I had a free appetizer coupon so I got that and a salad, which made that early dinner $8 less than it would have been.
All this early dinner stuff lately makes me think we are turning into one of those old Early Bird Special couples who eat dinner at 2 in the afternoon.  Geez, I didn't think we were THAT old yet. lolz
 
Last week,  I spent  $85.90 on  $121.97 worth of groceries at 3 stores.  I ended up not doing the Catalina Deals at Weis(PMITA)Markets.  This spending includes $11.55 on colonoscopy prep supplies and $16.18 on junk foods for #2 Son for the month and $12.62 for "we're having company" type foods.  So $40.35 of my $85.90 in spending wasn't for regular meal foods.
 
No food waste last week...woohoo!
  
Leftovers, that are still aok, going into this week's plan......1 helping of Chicken & Dumplings.  If I don't eat this for lunch one day, it can be fed to the dogs, with their undying thanks. lol

Company is arriving in time for dinner on Wednesday so I've got a plan in place through Wednesday.
As for Thursday, Friday and Saturday?.....no clue.  We will be winging it.

Meal Planning January Week 3, Food Spending Week 2

Well we had a rare FOOD WASTE situation last week.
Since I started being vigilant about FW a couple of years ago, this doesn't happen often.

I finally got the freezer defrosted and found a baggie of pork barbecue.....the real smoked stuff from this past Summer.  I had a small amount(3 sandwiches worth of meat?)but in the freezer for #1 Son to have when he came home.  Well, we couldn't find it when he was home at Christmas....figures, right? lol
It was a tad freezer burned when I dug it out and I couldn't give it to the dogs because it was sauced up North Carolina style(vinegar and hot sauce) and yah, I'm not chancing that running through the dogs gastrointestinal tracts, if you know what I mean. ;-)
So I had to throw out barbecue.....
Ugh!
I should have to turn in my Southerner badge for that.

Onward to the Meal Plan!

Here is what actually got served last week....

Sunday--Corned Beef, Cabbage, Potatoes, Carrots
Monday--Chinese take-out(again!), teen had Taco Bell
Tuesday--Salmon, Potato Salad, Green Beans
Wednesday--Leftovers
Thursday--Lasagna(from freezer)
Friday--Leftovers or Fend For Yourself Night
Saturday--Roast Chicken, Roasted Potatoes, Onions, Carrots

I served about half of the meals I had planned, due to picking up some good deals at the store, and I had to take a pan of lasagna out of the freezer when I defrosted it, so that has to be used.  The meals that didn't get served get moved to next week.

The food spending last week?

Well I made up for spending nothing the first week in January!
In the end, I spent $148.95 of my $400 food budget in Week 2, plus I have a $10 Catalina to use in the next 2 weeks.

I got the freezer defrosted so I had room for some .78¢ lb. Roasters, $3 bacon and $2.28 lb. Ground Beef.  Then I went to Weis and hit on some meat reductions--like 2 Roaster Chicken Breasts at .99¢ lb., almost 3lbs. of Italian Sausage for $1.44 lb. and 4 small Pork Roasts for $1.55 lb.  These Pork Roasts are 2lb. each and perfect for popping into the crockpot for making Pulled Pork Sandwiches.  Each one cost me about $3 and should make enough for 1 meal of sammies. I grabbed 2 dozen cheap eggs and some fresh fruit and veg too.
There was also a Catalina Deal at Weis which included pet food so I picked up Dog Kibble too as we were low.

As for leftovers rolling into this week--Lasagna, 1 helping of Cabbage, Chicken, Roasted Pots/Onions/Carrots Mix.

Monday--Leftovers
Tuesday--Rigatoni w/Meat Sauce, Brussel Sprouts, Rolls(made into Garlic bread)
Wednesday--Beef Tips in Gravy over Noodles, Asparagus
Thursday--Leftovers
Friday--Chicken Pot Pie
Saturday--Leftovers-if not enough then Cheese Steaks

I cooked enough steak on Sunday so we can have Beef Tips on Wednesday.  Daughter bought enough Asparagus for 2 meals. The Chicken dinner from last Saturday evening gets recreated into a Pot Pie on Friday.  If enough people can't find a leftover to eat on Saturday then I'll make the Cheese Steaks.....if not, the Cheese Steaks get put off until the following week's menu.
I have a container of homemade bechamel sauce left that has to get used, so on Monday evening I'll make a small pan of Mac and Cheese to augment that Leftovers night.

Needed at the store to serve this lot?
Daughter bought Asparagus and I bought Roasting Chicken and a bag of Carrots last week and we're using up bits and pieces of veggies so we don't need anything else this week to do this menu.
Last week's stocking up went much higher than the $50 I aimed for, as noted above.

I'll be going to my 2 grocery stores this week to note prices for the new Price Book but I hope to not have to buy but a few fresh produce items.

Food Spending December Week 4/Meal Planning January Week 1

And this is what happens to you if you fall asleep while the family is opening presents on Christmas morning.  You become the most festive beagle on the block! lol
We reuse the bows from one year to the next, so we need a place to put them aside so they don't end up in the trash bag........




As for meals?
Here is what actually got served last week....

Sunday--Chicken Enchiladas
Monday--Christmas Eve dinner at Chinese Restaurant
Tuesday--Ravioli w/Marinara Sauce, Standing Rib Roast, Roasted Vegetables, Green Beans, Rolls, Pies
Wednesday--Leftovers
Thursday--Pork Chops, homemade Mac and Cheese, Broccoli
Friday--Pizza, a green veggie from the freezer
Saturday--Leftovers

The food spending last week(the 24th to the 30th)came in at $110.70 for 7 days.  This includes the rib roast that cost, as one astute reader noted, "as much as a coat".
As I have finished food shopping for December(no food buying today, the 31st)I spent $439.11 in total for the month.  Pretty good considering the stocking up and the Holiday food excess.

Going into this week, I have these leftovers--ravioli, rolls(not to mention fudge and pie).

Monday--Date Lunch Out w/Hubs, then leftovers and appetizers for New Years at home
Tuesday--Tacos, Corn
Wednesday--Baked Salmon, leftover P. Salad, Caesar Salad, leftover rolls
Thursday--Cheesesteaks, Green Beans
Friday--Fried Shrimp, French Fries, Beets, any leftover veggies
Saturday--Leftovers or Fend for Yourself or Breakfast for Dinner

I have everything here already to make these meals.....ground beef for tacos, salmon, roast beef for cheesesteaks, shrimp are all in the freezer.  I might treat Hubs to country ham rolls tomorrow morning since we still have a plethora of rolls.  I used that last $5 voucher to buy romaine lettuce and some ground beef on Sunday, so we have all foodstuffs to make this menu now.
There will only be 3 at home this coming week to cook for.

Food Spending NOVEMBER Week 4, Meal Planning DECEMBER Week 1



Just looking at this picture makes my taste buds tingle with delight!
This is the Holy Grail of Soups for me.
And I can't find a restaurant that serves it that is any closer than 2.5 hours away from where I live.
Yet another reason to detest living here......
Some day I'll talk about how I obsess over this soup.

Yes, we pretty much ate every meal I planned but we may not have had them on the designated day.
So sue me.

The food spending last week was 1 trip to Price Chopper that cost me $32.39 for $68.35 reg. retail worth of goods. 
Some of these were really good deals.  There was a $5 off when you spend $20 on PC house brands and I got 2 dozen eggs, 4lbs. butter, 2 cartons OJ, 2 bottles of Tartar Sauce and 3 rolls of 'whack' biscuits
for $13.47.  The juice and eggs were on sale and I had .55¢/1 Qs for the butter(making each lb. $1.74 in addition to the $5 off $20 Q).
The yogurts all had instant dairy discount stickers on them so the Chobanis were .24¢ ea. and the quart of Mountain High left the store with me and PC paid me .26¢ to take it home!
Now THAT'S my kind of shopping. 8-)
Even the frozen pizzas were a deal.  We are in love with these Freschetta Sea Salt and Olive Oil pizzas.  I'd rather had a homemade pizza but for some reason we can't get enough of this frozen one.  They must put crack in it or something. ;-)
PC had them for $4.99 and I had .75¢/1 Qs and my PC now doubles FULLY up to .99¢, so they doubled to $1.50, making my pizzas $3.49 each!

I finished November spending $368.57 of our $400 food budget.

Going into this week, I have leftover Taco Beef(a little bit), some meatballs, some stuffing.  I also have a large container of ricotta cheese that needs using.  I had hoped to make cannoli but I don't think that will be happening.  I'll need to find a recipe for something else or make more stuffed shells to put into the freezer for later.

Tuesday--Chicken and Gravy over Fried Stuffing, Cali blend Veggies

Saturday--Leftovers or Breakfast for Dinner

This week I need to use up the stuffing or throw it into the freezer.  I'll pan saute some chicken breast, then put a crust on slices of stuffing and place the chicken and gravy over that on Tuesday. Getting inventive here!lol 
I'll break up the meatballs and use the taco beef for my meat sauce on Wednesday.

What I need to buy for this menu?
Salad Greens.  Everything else is on hand.
I'll be doing some shopping ahead this week....bagels, clementines, green chiles, cream cheese, sour cream, pasta, more OJ, some canned pumpkin(since it's on sale now), some cheese, etc.
I spent $35 already on Monday and plan on spending another $60 or so more this week.  I'm trying to keep it under $100 total for the week.

Food Spending NOVEMBER Week 3, Meal Planning Week 4

Happy shining teen faces, ready for pie.
Ok, so ONE of them is visibly happy.....call me shocked......

Well I am thankful THAT is over with.....aren't you? ;-)
Seriously, I am at that age where my kids should be grown(if I had birthed them sooner), have partners(hopefully be married) and be making me grandkids.
Along with that comes matriarchal status and being invited to their homes for Thanksgiving, where I sit on my fat ass and someone else slaves in the kitchen and SERVES ME Thanksgiving Dinner!
But alas, we are still many years away from that happening.......if EVER......lol
Now it's onward to the next Holiday and keeping all the plates in the air and spinning.

The food spending last week was $142.39 for $361.37 reg. retail worth of goods. And all but $8.16 of that $142.39 was spent AFTER Thanksgiving. 8-))
Yes Friday and Saturday I was burning through the food budget money grabbing those Holiday deals, wasn't I?
I have gone through $344.93 of the food money for November and have $55.07 left to get through until Saturday.

This week I need to use up only a couple of Thanksgiving leftovers.  The turkey will be gone tomorrow when Hubs makes a turkey sandwich to take to work.  What is left of the carrots/parsnips are very overcooked now, so I'll mash that up and add to the dogs' dinners.  I am finishing the cranberry as I type this. ;-)  The rolls are being eaten in the mornings and the pies, well the pies lived a very short while.

The only things left are stuffing and the potatoes that I halved and baked in foil.  I'll use the taters on Thursday and I'll serve the stuffing with the pork chops that night as well.

Left to buy this week for this menu?.....Salad greens.  We have certificates for 2 free pizzas at a local shop so we'll use one of those, or both if everyone is home on Friday and is extra hungry.
I haven't looked at the ads this week yet.  I do have a $5 certificate to use at the Shursave Market(got it on Friday when I bought General Mills brand flour and frozen veggies).  Besides the greens, we'll need milk later in the week, but I think I can stay under $55 this week.

Food Spending NOVEMBER Week 1, Meal Planning NOVEMBER Week 2


This has nothing to do with Meal Planning.  I just thought it was funny. 8-)

And here is what actually got served last week....

Sunday--Steak on grill, Salad, Roasted Potatoes & Onions
Monday--Reuben Sandwiches
Tuesday--Grilled Pork Chops, Green Beans, Cinnamon Apples
Wednesday--Kielbasi on Rolls, Onions and leftover Sauerkraut, Corn
Thursday--Chinese Take-out
Friday-- Ravioli with Sauce, Spinach Salad
Saturday--Leftovers
The food spending last week was $96.30 for $157.04 reg. retail worth of goods.  I also earned $20 in food Catalinas to spend in the coming 2 weeks so I should have little or ZERO OOP food expenses from now until Thanksgiving day.

Going into this week, I have leftover corned beef, swiss cheese and sauerkraut from the Reubens, and 1 large helping of Raviolis and Sauce.  I'll either have sandwiches for lunch or freeze the corned beef for later use.  I'll have the ravioli dish for one of my lunches.  Moving the 1 meal we didn't have last week to this week's menu and the big side dish of Halushki as well.

This week's menu....
Sunday--Halushki with Bacon
Monday--Chicken Pot Pie
Tuesday--Lasagna
Wednesday-Honey Mustard Chicken, Rice, Broccoli
Thursday--Chili, Cornbread
Friday--Tuna Casserole, Beets
Saturday--Leftovers

On Wednesday it's possible we'll have leftovers as well instead of the Honey Mustard Chicken.  There is leftover Halushki from Sunday, there should be leftover Pot Pie tonight and there will be leftover Lasagna on Tuesday, so the second chicken dish may not be needed this week.
What do I need to buy to serve this menu?  The local market had their semi-annual meat sale last week, so I picked up a huge pork loin(to cut into chops)and 2 large pkgs. of chicken breasts.  I've got 2 chicken dishes on deck for this week(or note) to use some of what I bought.  Chili will use some of the beef cubes in the freezer that are aging and the ricotta was bought last week to make the Lasagna this week.
Left to buy this week?.....maybe some romaine lettuce for a Caesar Salad to have with the Lasagna.
Add in some fruit and milk and we are done.
