This Week on the Dining Table....Nov. 10th to Nov. 17th

*Sorry this post is a day late but Monday was our semi-annual "medical safari" to Mississippi(which involved a 7+ hour car ride).  That's where the closest to us Dermatologist who actually practices Medical Dermatology is located.  But unless I go out of remission with my HS, it will be the last as they now have approval to do telehealth appointments. Yay!!!

The "This Is Weird" Edition.........


Remember when I posted a photo from my local Walmart of an employee's photo saying that they "back a product"(it was corn dogs I think).
Well I found another sign.  Evidently Nick backs these little plastic bowls(for sauce or dipping I think).
My guess is they hang one of these signs on products that are not moving(selling).  If you associate something with a person it sells better?  I don't know but I have never seen this sort of marketing strategy before at Walmart.  Now I can hunt for these photos when I go there.  Just another way to keep grocery shopping exciting. lolz

And here's what actually happened....

3. Tuesday--Salmon, Sweet Potato Fries
4. Wednesday--Spaghetti and Meatballs, Salad
5. Thursday--Cheeseburgers, Sweet Potato Fries
6. Friday--Take-Out Pizza (I was not up for cooking), Leftover Squash
7. Saturday--Leftover Pizza, Salad

The liver didn't happen. (Keep breathing Anne.)  Maybe this week.

What got taken out of the freezer last week....

Last week we spent $135.54 grocery shopping.  $66.26 of that was actually October 31st sending that got left off of last month's tally.  So it ends up in this current month.

Total shopping comes to $135.54 for November.  There are 19 shopping days left in November(counting from yesterday, when this should have posted).

Rebate monies earned this month so far.....
I've earned $98.14 on Ibotta in November.
I've earned $15.57 on TaDa in November.
I've earned $22.84 on Checkout51 in November.
I've earned $50.88 on Aisle, etc. in November. (Haven't gotten my Nature Valley rebate yet from June.  At this point I am giving up on this one.  That product went to the food bank long ago.)
I've earned 1,487 points on Fetch from food shopping in November.
I've earned 11,654 points from food shopping on Shop Kick in November.($46.61)
I've earned 19,349.07 points on My Points in November.(not sure what the conversion rate it here)
I've earned 1 from food shopping on Swag Bucks in November.($)

That is $171.86 in rebates(not counting Shop Kick/Fetch/MyPoints/Swag Bucks/TaDa/The Insiders were I earn gift cards)on $135.54 of grocery spending so in reality it's negative $36.32 in food spending after the rebate apps I count. I now separate out the Food Bank donations and don't count those in the grocery spending(but I do count any rebates on those items) so it's a win/win--the food bank gets a large donation of goods and I get a lower grocery bill.

My savings percentage for the last week was 35.24% and the monthly savings total for November comes in at 35.24% spent.

Leftovers going into this week.....au gratin taters, catfish, 2 hamburgers and sweet potato fries.

Frugal Friday....the March 22nd Edition

There are very few Frugal wins this past week but here goes....

*  I successfully used up odds and ends and incorporated them into new meals and no food got thrown out. 8-)  I cooked up the rest of an open pack of bacon-half went into the Liver meal(come on Anne!  You know you'd love my liver dinner)and the other half went into BLTs for Thursday night's dinner.

*  I got 2 MRIs done on Tuesday of my neck and base of my skull for the Neurologist(paid nothing).  I have 2 more MRIs scheduled later today for my shoulders for the Orthopedist(again, nothing will be owed for those).

*  There was no spending on eating out this week.

*  I had a dental cleaning on Wednesday.  Since I have no dental insurance at this point it cost me $$$ OOP.  But better to spend that now than not go to the dentist until I have a problem, so this is frugal, right?  They found nothing of concern so I am good to go until the end of October.  Maybe I should show up for that Halloween appointment wearing fake vampire teeth? lolz

*  I did a little Ibotta rebating on Thursday......


This all cost me $67.03 OOP.  Rebates I earned from Ibotta($24.50), Social Nature($14.47), Shopmium($13.00),  Zoup! manufacturer's rebate($4.98) brought it down to $10.08.  Add in $1.75 from Fetch and $1.82 from Shop Kick, $9 back on Alexa/Amazon plus using a $4.97 on a Walmart gift card and this all ends up as a $7.46 moneymaker.
If I buy one more item with an Ibotta rebate before Sunday night, I'll earn an additional $5 for hitting the Weekend Bonus(plus whatever the rebate for that one item is). 8-)
Some of this will go into the Donation Box, some to family and some we will keep.  Nothing will be wasted.
The only other food purchases was a pack of Romaine lettuce and 2 cans of Water Chestnuts which came to $5.60.


*  I found money!



I hit the jackpot of self-checkout machines at Walmart on Thursday(the only day I went out to a store).  Someone had left ALL their change in the coin return.  I guess they had gotten back their tax return refund and felt flush enough with dolla bills y'all so they didn't want no stinkin' change back.  Sweet!  I'll gladly take it!!  Bonus, I didn't have to pick this all up off the floor...

This Week on the Dining Table

 The "Death By Sodium" Edition.....


On Saturday I was going stir crazy not leaving the house and the home health person on Friday didn't have the restrictive bandaging system the NP wants me to wear so I could actually get a shoe on my right foot.  So we slipped out to Lucky Palace for lunch.  Like I mentioned before it's attached to a shady old motel and you have to go through the motel lobby to get to the entrance.  It calls itself an "extended stay" motel but houses more than a few Section 8 type welfare clients.  I snapped a photo of one of the vending machines on my way in.......


They had a soda machine and a snack machine.  This was the bottom corner of the snack machine.
Ok, so I've seen single served laundry packs in vending machines and headache meds(and condoms are usually in machines inside bathrooms, aren't they?)but the lighters(without a cigarette machine around?)and curiously, a can of Armour Vienna Sausages??  
And the wording on this sign on the machine struck me as strange....
"Do Not Shake vending machine under any situation!" lolz
I can think of a situation where I'd want to shake the machine.  Since you give no refunds, I'd shake that sucker to kingdom come to get my money back if it didn't give me my Vienna Sausages! ;-)

7. Saturday--Liver and Onions, Gravy, Mashed Potatoes, Mixed Veggies

And here's what actually happened........
1. Sunday--Pizza and Salad
2. Monday--Beef/Mushroom Stroganoff over Rice, Green Beans
3. Tuesday--Sesame Chicken w/bag of Veggies
4. Wednesday--Whopper Burger
5. Thursday--Subway subs(I had 1/2 a Tuna sub)
6.  Friday--Lasagna from "Lasagna Love"
7. Saturday--Fend for Yourself(Had Chinese out for lunch)

Found clearance fresh mushrooms at Kroger late the week before last so the Stroganoff was mostly mushrooms with a little beef.
Hubs fixed his frozen pizza Sunday but I didn't fix mine and just had salad that night.  Used a Chinese frozen meal and a bag of veggies, got take-out food 2 nights and my request from the Lasagna Love finally got fulfilled on Friday.(I requested a meal when I first injured my leg, well when we got home from the flight.  I figured I was in bad enough shape and not suppose to stand a lot so didn't feel like a freeloader for requesting a meal from this organization.)

What got put into the freezer last week....
* 2 1/2 gallons of ice cream

What got taken out of the freezer and used...
*  1 box of Sesame Chicken
*  1 bag of stir-fry veggies
*  1 baggie of beef strips
*  1 frozen Pizza
*  1 bag of Green Beans

Last week Hubs picked up stuff at Super 1 Foods and spent a total of $19.47.  Mostly ice cream, onions, potatoes and other fresh produce we were out of.
This brings our food/toiletries/paper goods Total to $325.01 for February so far.

There are 8 shopping days left in February.

I've earned $112.60 on Ibotta in February.
I've earned $0 on Checkout51 in February.
I've earned $7.00 on Coupons dotcom in February.
I've earned 3,271 points from shopping on Fetch in February.
I earned 30 points from food shopping on Shop Kick in February.
I've earned 0 SB from food shopping on Swag Bucks in February.

That's $119.60 in rebates(not counting the Shop Kick/Swag Bucks/Fetch)on $325.01
 in grocery spending so in reality it's $205.41 in food spending after the 3 rebate apps I count.

My savings percentage for the last week was 54.12% and the monthly savings total for February comes in at 30.86% so far.  

Leftovers going into this week.....a little Stroganoff but no rice, half of a lasagna.

What do I need to buy to fix everything on this menu?  I can finish the head of cabbage I bought for Cole Slaw by saute-ing it up to have with the catfish.  I need to buy collards and sweet potato which are both on sale.  I bought liver the week before at Walmart and will have liver and onions meal on Saturday and my daughter is coming over for that(She and I both love liver and my NP wants me to up my protein intake so this is quite literally what the doctor/nurse practitioner ordered. lol)  We also need milk and fruit as I finished the cherries we had though I do have canned stuff if Hubs doesn't pick me up something fresh on Monday.  Might stay under $400 for this month, might go over.  I resisted doing any Ibotta deals this past week/weekend.

Frugal Friday....the April 15th Edition

So here are a few of the frugal-ish things that happened here this past week.......

*   No food waste last week. Not much cooking either. Sort of works that way, right? lol

* I finished using those free Secret and Old Spice coupons at Rite-Aid.  I had sent away for these in February from P&G due to some lawsuit where they were giving coupons for freebies if you have recalled products.  Of course I hadn't "paid" OOP monies on the defective items either.   5 free deodorants for the win!


*  I went through the chest freezer and pulled out lots of items to use up if I had other fridge or shelf items to make a meal--tomato sauce from last year's garden, ground beef, steaks, ravioli.  I got 4 meals with leftovers made with items I already had.

* I hit Walmart on Wednesday and bought all this for Ibotta rebates....

Not pictured is a Breakstone cottage doubles(it was eaten already)too.
I also bought a clearance toothpaste, 2 Jello boxes and had a .25¢ any receipt off from a Rite-Aid shop on Monday.  Nothing OOP at Rite-Aid and $4.56 OOP at Walmart after a $1/1 Sargento Q and redeeming a $10 free gift card.  I earned back $9 in regular Ibotta rebates along with a .50¢ Bonus rebate on the Jello and $5 MidWeek Moneymaker Bonus for doing 10 rebates so $10.50 back on a $4.56 expenditure.  Not bad.

*  I used another $10 in free gift cards to cover most of the other items in my order, including a few treats(fudge drizzled popcorn!!)and 4 of these frozen meals.......

Salmon dinners I found in a clearance bin at Walmart, marked down to $2 each.  Some quick and healthy and CHEAP meals tucked into my freezer.  Yes please!

*  At another store I found a slew of frozen meals marked 75% off!  I picked up 4 breakfast sandwich 2 packs, 5 Devour meals,  4 Benihana meals, 2 trays of multi-serve meatloaves and 2 bags of fake chicken w/Asian Orange Sauce.   $89.08 worth of frozen meals for $22.27 OOP.  That is at least 8 breakfasts, 17 lunch or dinners covered for under $23.  Well  I do have to add rice or noodles and veg to the fake chicken and sides to the Meatloaf but even so, great deals!

*  I got $1.50 in post Qs at Rite-Aid on April 11th.....

Forgot to bring a coupon a couple of days before when I purchased something last week.

*  A purse sized bottle of hand sanitizer for free from Rite-Aid on Wednesday...


*  I finally received my replacement R-A gift cards in the mail for the multiple defective ones that wouldn't scan.
This has been a long drawn out nightmare and I am glad it's over with.  Hopefully these will work and I will NEVER buy another Rite-Aid gift card again.  'Nuf said.

*   I found money!

A penny last Friday at the Weis self-checkout.

Found these 2 dimes at my Rite-Aid in different locations in the store on Monday.

2 pennies, one each under a different self-checkout at Weis on April 12th.

A dime in front of my self-checkout on Wednesday at Walmart.


And then a dime in the drive-thru line at Burger King on Wednesday too.  I got a Whopper with a coupon and used a free gift card too.  Free food and finding money too, can't beat that with a stick! lolz

Ramblings About My Grocery Purchases This Week

I hit 2 grocery stores on Wednesday of this past week.
I spent a total of $99.69.
I am still under $300 for January, but just barely.

At the local independent market I did well, spending $31.38.
$19.42 of that was "planned" purchases for tomato paste stockup, clams, lettuce and OJ.
The other $11.96 I spent was "unplanned" good deals like 6 of my brand of yogurt for .48¢ cup, a cantaloupe for $1.99, 2 bottles of a brand of diet cola I can drink for .99¢ each and a 6" tall bottle of All Spice for $4.99(which I was out of).

And then I stepped into the snake pit called Weis(PMITA)Markets.
I spent $68.31 in there without batting an eye.
Ugh.

I spent for my "planned" purchases of 4 x spaghetti sauce and 2 x Kielbasa which cost me $10.37.

Then I spent another $33.15 on "unplanned" but good buys.....$14.35 of this was fresh produce and $18.07 of it was other buys like fresh seafood, a pack of lunchmeat for $1.19(after instant $2 Off Q), 2 x Bakery Dept. 50% off buys and 3 4-packs of sugar-free pudding for .88¢ each(so I don't go binge on sugared up snacks).

What did me in there was an "88¢ Sale" on certain products when you buy in multiples of 8.
Because of this and #2 Son's wants, I let another $25.52 fly outta my pocket.
Many MANY cans of chili and Mtn. Dew, plus boxes of ramen noodles and peanut butter Pop-Tarts later for stuff he will eat/drink,  I am $25.52 poorer.  If I hadn't gotten this stuff on sale I would have shelled out $40.02 instead so the damage to the budget wasn't as bad as it could have been.
But then again, if some of this hadn't been on sale, I might have NOT bought it......but then again again, I might have bought other items he wanted, which in the end might have cost even more. 8-))

I have $2.63 left of my $300 food budget for January at this moment.
And I have 7 more days to get through before the month is over.

So the plan, once the menu for this week is finished today is to shop in the freezer, fridge and stockpile/pantry for the rest of the month's meals.  I still have a free birthday meal from Red Robin I haven't used so that leaves us 5 days of eating dinners(Saturday's is planned and here, then take 1 day from the next 6 for the eating out).  We have plenty of food so this shouldn't be a problem, besides making the family stay out of the grocery stores! lol

And if there are any irresistible deals this coming sales week, I can go on next Saturday before the ads end as it is February 1st and I'll have a new food budget available.  Yay! ;-)

I need to rethink going to Weis as much as I do each month.
I just can't seem to get out of there without spending on some unplanned stuff!
Albeit, it's usually unplanned GOOD STUFF but still.....

Maybe I'll limit my trips there to once every other week instead of weekly, which is my usual routine.
That chain is very good at drawing you in, ya know?

Making Do In The Kitchen.....Mac and Cheese Variation

We love us some Macaroni and Cheese in my house.
I had Mac & Cheese with diced leftover Easter Ham on the menu yesterday.
I was going to use my usual recipe and just add the ham.
And my 'usual recipe' for said dish is the same one my mother used and taught to me many years ago.  I believe she originally got 'our family traditional recipe' off the box of Mueller's Elbow Macaroni.lol

Anyway, upbeknownst to me, we ended up out of fresh milk on Tuesday when I went to make the Mac and Cheese.
The Horrors!!
Add in that it was so hot here and I really didn't feel like standing over the stove for an extended time making a roux so that I could make the cheese sauce.
So I went digging in the stockpile and came up with an improvisation.....
While I didn't have any milk, I did have many cans of Evaporated Milk in the stockpile.
I also had jars of Alfredo Sauce so instead of making a roux, popped open a jar of Alfredo Sauce, dumped it into the pot and heated it slowly on medium.
When it was warm, I whisked in slowly the can of evaporated milk.
Then I slowly added an 8 ounce block of extra sharp cheddar cheese that had been grated, one handful at a time, incorporating by whisking, each handful before I added another.
The secret is to keep stirring so your cheese melds and doesn't separate from your milk.

Then it was just a matter of assembling the noodles, ham and sauce into the baking dish, sprinkling more grated cheddar on top and mashing up some multi-grain townhouse type crackers on top of the cheddar layer.
Bake at 350 for 45 minutes.

Using the ingredients I did may have saved me a little time & effort in the kitchen.
It definitely helped me use up some stockpile items and not have to run to the store for fresh milk.
And I have to say that the flavor of this dish of mac & cheese was EXCELLENT!
The combination of the parmesan in the alfredo sauce and the extra sharp cheddar was so good.
The paremsan gave it some tang while the cheddar gave it some bite and having 2 cheeses gave it a depth that truly enhanced the flavors!

In plain talk....it tasted better with 2 cheeses than one. ;-)

I think next time I'll try adding some Monterey Jack or Mozzarella.

Meal Plan Monday.....September 14th Edition Bread & Eating from the Stockpile Week

Last Week's Menu Post Mortum......

We had a spontaneous 'going out to eat' night last week the day the roofers were here.  They worked until dark and I just couldn't take another minute in this house with the noise AND cook dinner so we went out.  And we did leftovers another night, so the Fried Fish & the Italian Chicken didn't happen and will be moved to this week's menu.
I was happy that I could use up some meat odds n' ends on Sunday in the Chili. I had a small London Broil, a small chunk of ground turkey and ground beef.  None of which was big enough to make a full meal.  It was perfect to whip up some Chili.  I have some veggies in the freezer that aren't enough for enough servings for a meal, so once the weather gets a bit chillier, I'll be throwing those into a big pot of soup or stew to use them up.

I found some ears of local corn I had frozen last fall on Saturday.  Since we have fresh local corn now and I need to use these up, I'll be making Corn Chowder with the frozen ears this week.

This week I am still trying to move out some older frozen foods and stockpile boxed canned items.  But as of yesterday I have some new things to use up too.
Yes, I took son out yesterday and I found that those Evil people at ENTENMENN'S opened a Discount Bakery Outlet near my house, unbeknownst to me.

So I had to go in and scope it out.
And then I had to go and buy a bunch of day old rolls and treats.
So now I have hamburger rolls, steak rolls, english muffins & dinner rolls that need to be used before they expire.  I'll be working these bread products into my menu for this week.


Here's what I will be serving our family of 4 this Week...

MONDAY--Lasagna(leftover), Salad Greens(garden-still!), Garlic Bread(pantry)
TUESDAY--Kielbasa on Steak Rolls, Onions, fresh Corn on cob
WEDNESDAY--Burritos(freezer) w/leftover Chili with Cheese, Squash Casserole(garden/freezer)
THURSDAY--Marinated Italian Chicken(freezer/marinade in stockpile), Rice(stockpile), Veggie Melange(freezer)
FRIDAY--Fried Fish(freezer), French Fries(pantry), Green Beans(freezer)
SATURDAY--Turkey Sloppy Joe's on Rolls(freezer/stockpile/pantry), Squash Casserole(leftover from Wed.)
SUNDAY--Corn Chowder(freezer), Grilled Cheese or Leftovers
Dessert--Zucchini Bread, Seasonal Fresh Fruit


Last week I spent $62.37 on food & pet food.  Most of that was for lunch meats(that should last 2 weeks), a lot of milk, rye bread and fresh fruits....oh, and the Entenmenn's outlet bread products.  There was a little bit of stocking up on cranberry sauce.

This week's shopping list is light again....1 package of Kielbasa, fresh local corn on the cob and more fresh fruit.  I am sure I'll need milk this week too.  I'm figuring about $15 should cover it.  I'll have plenty of money leftover this week for stocking up if I find something we can use, that's on a great sale.

Food Waste Report....nothing thrown out last week. 8-))
There is some leftover BBQ Chicken legs that need eating and the dogs can't have that(because of the sauce).  I'll probably pick the meat off the bones and make myself a BBQ Chicken sandwich for lunch this week to use it up.

We did have to throw out some juice yesterday.  It was some new product I had bought on sale with a coupon this summer to try it.  It's called VitaminSense.  It was soooo NASTY!!!  It made me physically gag when I tried it and neither of the kids will drink it.
Just yuck.
I don't feel bad in the least for pouring it down the drainer.....well, I felt worse for wasting that $1.00 I spent on it.lol

I am all Cooked Out!

I came across this item in the back of my pantry a few days ago, while cleaning it out. The cleaning thing is all part of my Cleaning out the Pantry/Freezer Challenge I was taking part in over on the Compact Mailing List in June. I'm working on this Challenge through July too.

I must have picked this up on clearance at Big Lots back when my daughter still ate tuna fish. It has to be over a year old in that case, or older.

I wanted to serve this but no one besides me really likes tuna much. So I decided to shake things up a bit.
I made the Tuna Helper as directed on the box, except I left out the tuna. Then I cut up some leftover raw summer squash, broccoli we bought last Friday and got some bagged crinkle cut carrots out of the freezer. I put a little Olive Oil in a hot skillet and sort of 'stir fried' the veggies while the fettuccine and sauce were simmering.

When all was cooked, instead of Tuna Fettuccine Alfredo.....


I had Fettuccine Alfredo Primavera!

We had a yummy non-meat meal for 3 and I didn't have to throw away the box of Tuna Helper.

In other Cooking news....I spent most of Monday preparing food for later use.

I chopped onions, red & yellow bell peppers.
Then I cooked multiple packages of ground beef and grilled chicken breasts on the gas grill.
I made up a meatball mixture with some of the raw ground beef, formed & cooked 42 meatballs(1/2 are for Thursday night's dinner, 1/2 for the freezer to eat later).
While the meatballs cooked I picked & pulled apart the grilled chicken, then sauted the veggies/aromatics with tomatoes, garlic and herbs/spice.
After I grated 1/2lb. each of jack and cheddar cheese, it was time to grab the tortillas and start the burrito assembly line.
A little refried beans, a big spoon of grilled chicken or ground beef, another spoon of tomato & veggies and a clump of cheese to fill each tortilla.
Fold & roll each tortilla up in foil.
Over & over again.....until I had 12 chicken & 12 beef burritos all ready to be loaded into the freezer. Here are some of them.....



The last 6 tortillas were used to make a dish of Enchiladas for Tuesday night's dinner(we've moved this meal to Wednesday now, as we had leftovers tonight). The Enchiladas are covered with foil in the fridge, awaiting the enchilada sauce and monterey jack cheese, which I'll add right before heating them up.

We'll be eating good food and doing it frugally this week!

Enchiladas on Wednesday(just top & shove it in the oven).
Spaghetti & Meatballs on Thursday(just have to boil the noodles and assemble the meal)
More leftovers on Friday(pork bbq or fettucine or enchiladas, etc, just reheat)
Eating out Chinese on Saturday(Lunch time not dinner because the lunch price is less expensive)
Corned Beef, Cabbage, Potatoes, Carrots(in the crockpot-no work just dump it in & leave it)

I've gotten all my "real" cooking out of the way for the week. More time to spend on other things....like enjoying the pool! ;-)
