This week I want to hear about any good recipes you have for using pumpkin. Please no pumpkin bread or plain old pumpkin pie. I REALLY need a good pumpkin doughnut recipe....well, my waistline doesn't need it, but my mouth does. lolz

How about a pumpkin cheesecake? I don't eat pumpkin, but maybe if it was incorporated into a cheesecake, I would try it.

My mom makes pumpkin cupcakes with carmel inside(don't eat when hot) and then she puts a carmel glaze on top. None of us are allowed to make them because she won't tell us how. She says its in her will.
ReplyDeleteHmph, my pumpkin pie recipe is my mother's and you would like it. I think my pumpkin bread is superb, and lots of other people think so, too. But, this is your loss. I suppose those are the only two pumpkin recipes I can think of today. After the new year when I want pumpkin pie, I usually just make the filling and put it into a casserole. That saves my buying a crust and eating more carbs.
ReplyDeleteI am not a big fan of pumpkin. I am on a diet due to health reasons and came across a recipe for pumpkin hummus and it was very good. I will be making it again. Thanks for the giveaway!!!
ReplyDeleteThis week Trader Joe's was sampling a pumpkin soup. It was good but I am on a hunt to find a similar recipe to make from scratch here at home. This time of year Costco often has pumpkin ravioli. If you see them buy them! I serve them with browned butter and toasted walnuts! I realize that I didn't actually post a recipe but if I find a good recipe for the soup I promise to send you copy.
ReplyDeleteOur daughter, Samantha's, favorite: Pumpkin Muffins. Super easy, lowfat recipe. One cake mix, chocolate or spice cake are the best, on can pumpkin puree and 1/3 cup of water. Mix together and put in muffin pan. I usually fill half way, but you could do 2/3 full. Do not use muffin tin liners as these muffins will stick to the liners. Trust me. Bake at 350 for 25 - 30 minutes until inserted toothpick comes out clean. Different cooking times for different ovens. These muffins don't rise a lot, but they are super moist and delicious. I have also made this in a cake pan for Samantha's birthday. Seriously, it is her favorite.

ReplyDeleteOoops, I have been remiss in posting to enter. I have many cans of pumpkin. I heard about the cake and pumpkin mix somewhere else, too. So, I am going to try it in a dark chocolate cake mix and a yellow cake mix with spices to make it a spice cake. Wish me luck.
