The Cooking Marathon Has Begun!

So we have achieved Pumpkin Pies......

And Cookies......

I tried a new recipe called Cranberry Pistachio Oat Cookies.  Sort of a Raisin Oatmeal but with Cranberries instead of Raisins and Pistachios.  They are very good.  If anyone wants the recipe I can post it later, just ask.  It came from the Healthy Bites magazine from Weis PMITA Markets.

And then I made the Cornbread......

No, we aren't eating Cornbread for Thanksgiving.  I made this to put into my Stuffing.

That was yesterday's cooking.
Now I am off to finish chopping onions and celery, and everything else I need to do to make the stuffing.

Then it's onward to peeling, boiling and mashing potatoes for the potato roll dough.

Who's bringing me dinner this evening?
I'm too busy to cook it!lol

  1. And you have pictures! Our marathon starts today as well: pumpkin cheesecake, pecan pie, and prep brussels sprouts and sweet potatoes for tomorrow. Tomorrow first thing it's apple pie, then the turkey, potatoes, gravy, dressing and cranberry sauce. Friends are bringing beverages, rolls, green bean casserole, relish dish and another squash casserole.

I love all the food, but am thankful this only occurs once a year.

  3. Isn't that the truth? Cooking keeps you too busy to cook. Have a piece of pie like I would if I had cooked pies yet. Try explaining that to a family. OH? You have? Show them the pie or the peanut butter and bread.

My family got leftovers from the week or a sandwich or pie and maybe all three. I did make at least 6 or 7 pumpkin pies back then.

  4. Nice work! I made two pies, and prepped a couple of appetizers. I'm also in charge of bringing the wine, some kid friendly stuff, & the kids activities. My family knows how to party! ;-)

  5. I'm working without a bottom oven element, so there won't be a "real" turkey. We're having one of the foil package turkey rolls which can fit into a toaster oven. Dressing has been mostly put together and will be dumped into my larger crockpot, and green bean casserole will cook in the small crockpot. Mashed potatoes will cook on stovetop, squash and sweet potatoes will cook in microwave. I've cut vegetable sticks, made deviled eggs and a simple fruit salad with fresh bananas, apples and halved grapes mixed into cool whip. Will open a can of bread and butter pickles I made a few weeks ago, brown some rolls, and follow it all up with pumpkin pie (bought). Only two of us here to eat it, so we'll be mighty full at the end of it all. :-O I will miss having all the turkey leftovers and homemade soup afterwards, but I sure have nothing to complain about.

  6. Cranberry Pistachio Oat Cookies sound awesome! I wouldn't mind that recipe but only when you aren't busy. I just got my house back together. It never seems to end. And all I really wanted to do was poke around on the computer.
