It's the "Cooking From Scratch A Lot" Edition.............
I've been doing a lot of scratch cooking this past month. Above was a meal eaten sometime in June-salmon(breaded fillets for 2 of the diners), roasted Brussels Sprouts(with bacon!)and mac and cheese.
The Daughter had to work until 9 pm that night so she had to reheat hers and missed being the first person to dig into that pan of mac and cheese. I sent her this photo above at work and told her dinner was ready.
She messaged me back that I was a brat. Well, yes, yes I am! ;-)
Moving on......
Here's what was planned last week--
1. Sunday--Leftovers or FFY
2. Monday--Cook-Out Foods
3. Tuesday--Chicken Parmesan, leftover Risotto(for those who want it), Salad
4. Wednesday--Pork BBQ, Cole Slaw, Buns, leftover Cook-Out sides
5. Thursday--Meatloaf, Sugar Snap Peas, leftover stuffing(for those who want it)
6. Friday--Shrimp Dish(Shrimp and Grits or Garlic Ginger Shrimp Stir-Fry or Shrimp Scampi)
7. Saturday--Leftovers
And this is what actually happened--

7. Saturday--Leftovers
7 meals cooked at home, 2 of them nights of leftovers.

for my grocery spending..... I spent a total of $161.87 on 6 trips to 3 different stores. I have $145.04 left of my $450 food budget with
20 days to go in the month.
Yah, this doesn't bode well for staying under budget this month. 8-(
Leftovers going into this week........Pork BBQ. That's it. Everything else got eaten. I live with eating machines evidently!

That mac & cheese looks delicious! We pretty much stuck to our meal plan for the week. Yesterday was supposed to be grilled burgers, but my husband picked up fresh Alaskan salmon instead. Much more expensive, but a limited time availability & his favorite food.
ReplyDeleteTwo bananas for five people??? I have cooked a hen in the crockpot and have lots of vegetables and salad greens. One day, I am going to scramble eggs for dinner and add a short can of salmon.

Tues: Crockpot turkey chilli, tossed salad, steamed Summer squash
Wed: YOYO/leftover night
Th: spaghetti with Italian sauasage crumbles in spaghetti sauce, tossed salad, mixed Italian flat beans and wax beans sauteed in EVOO with Italian herbs and peppers/onions, chiabatta garlic rolls
Fri: beef-bean tacos on flour tortillas w/ homemade refried beans, steamed beets

ReplyDeleteI made crockpot chicken in mushroom sauce with carrots and celery last night to go over rice. We are eating the leftovers tonight. I am trying to use up what is in the fridge and freezer as it has to be empty in 2 weeks when they redo our floors so they can move it into the garage. Everything has to fit into our regular minifreezer and minifridge or go to Moms so best to just eat it up. I don't meal plan - we just wing it from day to day. I agree - mmm homemade mac and cheese! yummy

ReplyDeleteWe are doing spaghetti tonight. Other items this week include cheese enchiladas and Mexican rice, Beans & Cornbread, Mac and Cheese, and a Baked Potato night. :)
wow that is a rich dinner! I find in the summer we can't eat big evening means just too heavy in the heat. In the winter we might. Mostly grilled meat like chicken and some salad or garden veggies here
ReplyDeleteI really enjoy your menu posts. I rarely meal plan beyond 2-3 days, to allow for our rather unpredictable days.
ReplyDeleteQuestion: Do you all gather around the dining table at a set time? I know people say that's hard, and with kids' activities, it can be. Still, I try to do it as often as possible. I find it's much easier, though, to set a time for dinner, then serve once, clean up once! As some of our older ones are now young teens, I will NOT try to tell you that they ways make great dining companions, though.
When it is just Den and I, I have to find ways to use up leftovers. Now, we are running out of food at a quick clip. Its a bit scary.
